Fresh Food Friday: Lighter Chicken Alfredo with Broccoli & Mushrooms

chicken alfredoI don’t know what it is about Fridays that make me so happy.  While part of it is knowing that I’ve survived yet another long week, a majority of my excitement comes from sharing another great recipe with you all.  As I’ve said before, I’m a total pasta freak so my heart beams with joy anytime I discover a new way to make a clean noodle dish.  Out of all of the pasta recipes I’ve tried thus far, this one is by far my favorite.  This adapted chicken alfredo dish combines whole wheat pasta with grilled chicken, roasted broccoli, and sautéed mushrooms tossed with a creamy sauce made from natural ingredients.  But don’t let the healthy ingredients fool you, this dish is bursting with so much flavor that you’ll forget that it’s actually good for you.

Ingredientes (4  servings):

  • 1 boneless, skinless chicken breast, grilled and cut into chunks
  • 2 cups roasted broccoli florets
  • ~ 1/4 cup sliced mushrooms
  • 8 ounces whole wheat fettuccine
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons minced garlic
  • 2 tablespoons wheat flour
  • 1 cup fat-free, low sodium chicken broth**
  • >1/4 cup plain nonfat Greek yogurt
  • 1/4 cup skim milk**
  • 1/4 teaspoon pepper
  • 1 pinch ground nutmeg
  • 3/4 cup shredded Parmesan cheese

Dirrecciones:

  1. Cook the pasta according to package directions. Drain and set aside.
  2. In a medium saucepan, heat the olive oil over medium-low heat. Add garlic and cook, stirring frequently, until the garlic is golden, about 1 to 2 minutes
  3. Add mushrooms and sautée until browned, about 3-4 minutes
  4. Whisk in the flour until smooth, about 2 minutes. Gradually whisk in the chicken broth, Greek yogurt, milk, pepper and nutmeg. Bring to a low boil, stirring constantly
  5. Lower the heat and simmer, stirring gently, until the mixture thickens, about 3 minutes. Stir in 3/4 cup Parmesan cheese
  6. Add cooked chicken and broccoli to sauce mixture, followed by the cooked pasta. Toss to combine and serve with more Parmesan, if desired

**If you find that the pasta is a little on the dry side, add a tad more milk and chicken broth until it’s at the consistency you like.
